Sweet Chili Salmon

Cook time: 20-25 minutes
Yield: 4 servings
Serving size: 4 ounce salmon*
4 – 4 oz salmon fillets
2 cups bran or Kashi® Go Lean cereal
1 Tbsp chili powder
1-2 large lemon
1 cup sweet red chili sauce

1. Preheat oven to 350 degrees.
2. Spray a baking sheet or large pan with nonstick cooking spray.
3. Place cereal in a food processor or blender and crush until the cereal becomes a breadcrumb like consistency.
4. Using a whisk, mix crushed cereal and 1 Tbsp chili powder together in a medium sized bowl.
5. Place sweet red chili sauce in a separate medium size shallow bowl.
6. Dip each salmon filet into sweet red chili sauce making sure to cover on all sides.
7. Immediately dip each covered salmon fillet into crushed cereal and make sure to cover the ?salmon fillet evenly.
8. Place salmon fillet onto a sprayed baking sheet or baking pan. Repeat with remaining salmon fillets.
9. Bake salmon fillets for 15-20 minutes until cooked to desired doneness.
10. Squeeze each salmon fillet with lemon before serving.

Cilantro Chicken

2 1/2 pounds boneless/skinless chicken thighs, fat trimmed
1/4 cup extra virgin olive oil
1/4 cup minced garlic
1/2 bunch fresh cilantro (a big handful)
3/4 to 1 cup sweet chili sauce

1. Place chicken in a large zip baggie.
2. Place olive oil, garlic and cilantro in a blender or food processor. Process until the mixture is combined and smooth. Scoop the marinade into the bag with the chicken, press the air out of the bag and zip it closed. Knead the marinade into the chicken until it is evenly distributed. Marinate overnight or all day long.
3. Preheat the grill to medium heat and coat with oil or grill spray. Remove chicken from the bag and grill 4 to 5 minutes on the first side, until good grill marks are showing. Flip and grill an additional 3 to 4 minutes or until the chicken is cooked through.
4. Remove chicken to a platter and brush the sweet chili sauce on top.
*1/4 cup of minced garlic is quite a lot to mince yourself. I like to buy it already minced for this recipe – either fresh or jarred.
*If you are preparing this recipe as gluten-free, just be sure to use a brand of chili garlic sauce that is known to be GF.

Eggplant Lasagna

1 whole small eggplant or 1/2 large eggplant
Extra Virgin Olive Oil, for drizzling
salt & pepper
1 lb. ground turkey (I used 1.35 lbs and it worked out fine)
1/2 cup chopped onion (about 1/2 of a medium onion)
1 cup mozzarella cheese, shredded 1 (14.5 oz.) can diced tomatoes
1 (6 oz.) can tomato paste
2 tsps red wine vinegar
3 cloves garlic, minced 1 tsp dried oregano
1 tsp dried bas

Preheat oven to 450 degrees and line baking sheet with foil and spray with cooking spray or olive oil spray.
Slice eggplant into thin slices. Arrange slices on a baking sheet. Drizzle eggplant with olive oil or spray with olive oil spray and salt & pepper. Roast for 12 minutes, flipping halfway through.
Meanwhile, brown ground turkey and onion in a large skillet on medium-high heat.
Add and blend into browned turkey; diced tomatoes, garlic, tomato paste, red wine vinegar, oregano, and basil. Let the mixture simmer for about 5 minutes.
*To assemble the lasagna*
First, spread half of the meat sauce on the bottom of a 2-1/2 quart casserole dish. Second, layer the roasted eggplant slices. Third, layer a sprinkling of cheese (of desired amount, I used about 1/2 cup). Repeat again.
Bake for approximately 45-60 mins at 375 degrees.

Strawberries and Cream Sandwiches

1/2 cup COOL WHIP whipped topping, thawed
1/4 cup diced strawberries
6 graham cracker squares (3 sheets broken in half)

1. Place 3 graham cracker squares on a plate or baking sheet.
2. Put strawberries in a bowl. Fold in COOL WHIP whipped topping until combined.
3. Spoon an even amount of COOL WHIP mixture on top of each square. Top with remaining graham cracker square.
4. Place in freezer until COOL WHIP whipped topping has set, about 30 minutes.
